Fortified wines may not be at the forefront of modern wine discussion, but the best of the category can be absolutely thrilling. They are made by adding a neutral spirit to fermenting wine in order to halt fermentation by killing the yeast. Historically the wines were fortified to stabilize them and protect them during overseas shipment, often to the British market, whose love of wine and frequent quarrels with France forced them to get creative. Although this process is no longer essential in the modern world, many special wines continue to be made in this style. These wines are endlessly complex and show depth and power that simply can’t be matched by dry wines.
Of course, knowing when to open these types of wine is the real trick. They are often perfectly suited to after dinner drinks, especially with a cheese course or with dessert. While these wines are very stable after opening (especially madeira) and can be enjoyed over the course of a few weeks, we often open them when we entertain a large group; they are just the ticket to cap off a great holiday party. Rarely would we plan on sitting down to drink these wines on their own, but sometimes it’s hard to resist the urge to do just that.
