WELCOME TO THE BEET!
We’re really excited about our new monthly digest, The Beet, chock full of hand-picked topics and farm fresh news.
We’re eager to bring you a taste of life on the ranch and pique your interest in what it takes to put food and wine on the table.
FROM THE VINEYARD
We’ve been busy since harvest! Once in a blue moon, vineyards have to be removed due to age or disease. At the end of the 2015 harvest, we removed an old Sauvignon Blanc block from our Rutherford Estate.
Click here to check out the monster bulldozers and the dust they kicked up.
FROM THE FARM
Hearty greens stand up to frost, so we grow a lot of them in cooler months. Kale, one of our favorites, is planted September to February and harvested October to May.
We cultivate Lacinato, Red Russian, White Russian and Toscano varietals, which you
can find Friday through Sunday at our
Farmer’s Market at Farmstead!
AT THE TABLE
One of the most popular dishes at our restaurant is the kale salad. We use Lacinato kale, but you can use any varietal you’d like. We make a simple lemon vinaigrette and add toasted parmesan crisps for a little crunch. We like to top our salad with an egg and
fill our glass with sauvignon blanc
(*cork pop*), now enjoy (ahhh)!
Here’s the recipe to make it at home.
