Greetings!
We have another wine dinner on the schedule and this one will rock you to the core.  Relativity Vineyards in Napa and Sonoma, making some of the best wines around and they are truly affordable and noteworthy. 
We are going to Cafe Colore on Rte 9 in Freehold for this shindig.  We have it scheduled for a Wednesday because we know it’s the summer and weekends are made for the beach.  But mid week, YOU ARE MINE!!!!!

Meet Robert Enslein and Erik Ekstein, both big time wine drinkers with sophisticated palates with a shared dream. One afternoon, over a glass of wine, the pair began chatting about how great it would be to be able to drink a wine they called theirs. What began as a far-fetched vision slowly grew and these two using their knowledge and passion for great wine, would turn that vision into reality. Working tirelessly with winemakers and vineyard owners throughout California, Robert and Erik set out to produce a wine based on the ideals of bringing high quality wine that is accessible and affordable to all.
After several variations Robert and Eric found a blend of Cabernet Sauvignon that was full-bodied, ripe and well-structured with dark, supple fruit filled with blackberry and cassis; finishing round and clean, and so Relativity Vineyards was born.
Just as Bob and Erik wanted, the Cabernet is perfect company for delightful conversation, but with a structure strong enough to stand up to food. Realizing what a great success Relativity Cabernet was to be, Robert and Eric developed a Chardonnay which was then followed by Quantum, a Zinfandel blend. In comparison to other brands much more expensive, Relativity is a wine you can support as the quality is high, without the attendant California pricing of late. The philosophy of providing the best juice at a reasonable cost without the pretentiousness often associated with wine continues to drive the Relativity family to put forth their best in all endeavors. We invite you to become a part of the Relativity family, we know youl will be just as happy as we are.

1st Course
Scallops Carpaccio
layers of thinly sliced scallops and red and yellow beefsteak tomatoes drizzled with a caper, berry and citrus sauce
Relativity Sonoma County Chardonnay
Relativity Vineyards Sonoma County Chardonnay is accented with light golden straw colors and clean aromas of white peach with hints of apricot. On the palate, the crisp, clean acidity is followed by luscious peach and apricot fruit flavors with a touch of oak.
2nd Course
Pan Roasted Cajun Tuna
cajun seasoned tuna served over grilled asparagus and saffron potato cubes, finished in a roasted tomato broth and roasted garlic foam
Relativity Merlot
A lighter styled merlot with lots of red fruit pushing the front door open for pairing with lots of untraditional fare.  Layers of structure and complexity add to the allure of the wine not often seen from this area
3rd Course
Braised Short Ribs
certified Angus beef short ribs slow braised and accompanied by truffle and chive mashed potato croquettes and grilled eggplant rolls (stuffed with grilled peppers and asparagus) finished in a chipolte barbeque sauce
Relativity Quantum Reserve
Zinfandel (75%), Petit Sirah(15.5%), Syrah (5.2%), Grenache (2.3%), Charbono (2%)
Black raspberry, pepper and chocolate on the nose, followed by rich, layered flavors of dark berries, allspice, and licorice. Soft tannins round out the finish
4th Course
Apples & Pears Chocolate Neopoleon
fresh apples and pears covered in chocolate-layered with puff pastry and a spiced cinnamon whipped cream sprinkled with roasted peanuts and a strawberry couli
Relativity Rutherford Cabernet Sauvignon
This wine is made from 100% Rutherford Cabernet Sauvignon grapes, which is then aged 14 months in new French oak by winemaker Cary Gott. The farming methods are pristine and yields are extremely low. This Cabernet Sauvignon has some muscle, with big structure and big tannins, however there is enough fruit to make this wine approachable now. The plush textures really start to show in the mid-pallet and go all the way through the finish. This wine can age for another 10 years. Only 238 cases made.
